Join us for dinner on Thursday, August 25, 2011 at 6:00 p.m. and enjoy a unique end of summer experience at the second annual ‘farm field’ gourmet dinner.
Hosted by the County of Lennox and Addington, Economic Development department, this unique culinary experience features a unique six-course dinner showcasing local L&A-grown produce, meats and cheeses.
This epicurean delight has been conceived and will be prepared by Chef Clayton Ratte. Dinner courses will be paired with complimentary wines from L&A County’s two well-known wineries, Bergeron Estate Winery and Thirty Three Vines. Chef Clayton has developed a wonderful menu:
Cognac Pâté with Cumberland Sauce and French Bread (from Quinn’s Meats in Yarker; Paulridge Berry Farm in Switzerville; Len’s Bakery, Napanee).
Smoked Trout Salad with Grilled Corn Salsa and Field Greens (Grey Stone Trout Farm, Marlbank; Van Vlack’s Farm Market, Napanee; Willow Brook Farm, Bath; Chef Clayton’s Herb Garden).
Chilled Cucumber Mint Soup (Fred Holmes Market Garden, Hay Bay; Chef Clayton’s Herb Garden)
Rabbit Pie with Roasted Baby Beets and Carrots in Parsley Butter (Maple Lim Farms, Switzerville; Garrett’s Farm Market, Tamworth).
Roast Strip Loin of Beef with Duchesse Potatoes and Broccoli Cauliflower Au Gratin (Quinn’s Meats, Yarker; Fred Holmes Market Garden, Hay Bay; Wilton Cheese Factory, Wilton).
Apple Tart with Clover Honey and Wilton Cheddar (Loyalist Farm Orchards, Adolphustown; Wilton Cheese Factory, Wilton; Colebrook Honey by Bill and the Bees, Colebrook).
